Yoshida Fajitas

Yoshida Fajitas are a regular menu item in our family!  They are quick & easy, and we typically have everything we need for them already in the house! 

I got this recipe from one my youth leaders when I was in Jr.High & High School.  They would have students over for dinner on Monday nights and this was one of their favorites (and became mine too).

Yoshida Fajitas

Ingredients:
Rice
Pineapple Tidbits (canned)
Bell Pepper (cut into strips)
Chicken Breast
Tortillas
Yoshida Sauce (we buy this in the big container at costco - it's good for stir fry too)
Thousand Island Dressing
Shredded Cheddar Cheese
Onion strips (optional)

1. Start cooking rice according to package instructions
2. Cook up the chicken breast in small chunks and add Yoshida sauce at the end.
3. Make fajita with rice, chicken and all other ingredients. 
4. Eat!

I'm not a fan of thousand island dressing on anything ordinarilly, but we LOVE it on these.  It's just a fun combonation of flavors.  I have some friends who put ranch on it instead, so if you absolutely hate the 1000 island (after you try it at least once) then go to the ranch :).
