On my Take Shape for Life eating plan, there have been a few of my favorite foods I have missed. One of them has been pizza!
People have been talking on the medifast board I'm on about cauliflower pizza crust and I decided to give it a try. Everyone was talking about this recipe on the board, but my favorite pizza at home is a buffalo chicken pizza so I used her basic crust recipe and modified the toppings.
Cauliflower Crust Buffalo Chicken Pizza
Ingredients
Crust
1 cup of grated RAW cauliflower (2 Greens)
1/4 cup of egg beaters (1/8 Lean)
1/4 cup Reduced Fat 2% Mozzarella cheese (1/4 Lean)
Sauce
1/4 cup diced tomato (1/2 Green)
1 TBL Franks Red Hot Sauce (or wing sauce)
Toppings
2.25 oz lean cooked chopped chicken breast (3/8 Lean)
1/4 cup Reduced Fat 2% Mozzarella cheese (1/4 Lean)
2 TBL of Low fat/low carb blue cheese dressing (1 Healthy Fat)
Instructions:
Preheat oven to 425 degrees. Mix grated cauliflower, egg beaters and cheese in a bowl. Put onto a greased non stick cookie sheet and spread out into a crust like shape about the size of a dinner plate. Bake for 30 minutes then flip and bake for another 10 minutes.
While the crust is baking, blend my diced tomatoes and buffalo sauce together to make a sauce. Also cook your chicken (we grilled ours).
When the crust is complete, spread your sauce and toppings on the pizza, and blob the dressing on to act as "blue cheese chunks" and put in the oven to broil long enough just to melt the cheese.
Everyone enjoyed the crust. Addy gobbled it down (great way to sneak veggies!). Jon said as long as this has not permanently replaced homemade crust he could eat it once month or so :). I will agree it's no pizza crust. But I enjoyed the flavor a LOT! Plus the crust really is the vehicle for all the yumminess on top, so it did a great job in my opinion. But don't expect it to taste like bread.
Now, I must use the disclaimer that my Take Shape for Life Manual says nothing about the use of the low fat mozzarella, however most people who use it in their recipes on their blog say they talked to nutritional support for approval. My guess is you will have better results avoiding dairy as much as possible, however if you are craving pizza, this was a much better choice than breaking plan completely! I plugged all the ingredients into my fitness pal and the meal still rang up as follows:

15 g Carbs
17 g Fat
40 g Protein
4 g Sugar
Compare that with the fully approved (in my manual) Cheese Stuffed Turkey Burgers Stats w/salad and dressing.

10 g Carbs
19 g Fat
29 g Protein
5 g Sugar
Pretty stinking close! I'm math nerd so I was super curious to see the nutrition facts on this.
Keep in mind the pizza recipe is 1/2 a green short, so add some pepper strips or something on the side to complete it.
Also Addy had a crust with marinara and chicken and cheese. Jon loaded his with LOTS of cheese and real blue cheese. So it was super easy for all to eat however they choose.
