Thai Chicken Pizza

I used to cringe at the idea of homemade pizza.  I always remember mediocre sauce, mediocre toppings, baked on a tough crust, which made for a whole bunch of nasty on my plate.  I'm not sure if cafeteria pizza gave me this stereotype or what, but I was WAY wrong assuming all homemade pizza would be that mediocre.

We have  a few homemade pizza recipes that are our go tos.  None of these are traditional "flavors" though.  I find that the more creative we have gone the better the results because you just can't compare pepperoni to pepperoni, because often the quality of the pizza place pepperoni is better than the affordable stuff at the grocery store.

All that to say, the Homemade Thai Chicken Pizza is one of our favorites.  I got the recipe from our friend and have modified it to our taste a little bit.

Ingredients
FOR CRUST

1 (.25 ounce) package active dry yeast
1 teaspoon white sugar
1 cup warm water (110 degrees F/45 degrees C)
2 1/2 cups bread flour
2 tablespoons olive oil
1 teaspoon salt

FOR PIZZA TOPPINGS
Your Favorite Peanut Sauce or make your own
Cooked Chicken Breast Chopped or shredded
Peanuts (unsalted is better in my opinion)
Green onions (diced)
Shredded Carrot
Mozzarella Cheese

Here is how we make it from start to finish!

1. Throw 1 Large Chicken Breast on the grill (we use our George Foreman Grill) and cook through.

2. Meanwhile make the crust:
-Preheat oven to 450 degrees.
-In a medium bowl dissolve yeast and sugar in warm water.  Let it stand until it is creamy/frothy, about 10 minutes
-Put Flour, salt and oil in stand mixer with dough hook attachment, and add water/yeast mixture when it is ready.  Turn on mixer and beat until smooth. Let it rest for about 5 minutes.
- Put dough on a lightly floured surface and roll it out into a pizza shape.  Let it rest about 5 minutes.
- Put crust on pizza pan or stone dusted with cornmeal (or a little flour).


3. Now it's time to add the sauce and toppings! I always put them down in this order however you can do whatever you want!!
-Sauce (BE GENEROUS)
-Chicken
-Peanuts
-Cheese
-Onions
-Carrots

4. Bake in the oven for about 13-18 minutes (we end up needing about 15 minutes).  Just make sure the crust is done and browned since everything is already cooked!

  1. I love Thai pizza! Maybe when we finally meet up for dinner we should do homemade pizzas. We have a chicken/spinach/pesto that is deelish.
