Homemade Poptarts!

I have been trying to shave our grocery budget down, and one of the area I thought would make a difference it to find some more homemade snacks for Addy.  We don't have tons of convenience food, but we constant have granola bars for snack and I'm trying to find some alternatives. 

Addy has never had a store bought pop tart to my knowledge, but I wanted to give the homemade one's a shot and they were a hit!!



HOMEMADE POPTARTS

Ingredients
1 ¼ cup whole-wheat flour, plus extra for rolling out the dough
1 cup white flour
½ tsp salt
1 cup cold, unsalted butter (2 sticks)
½ cup ice water
1 egg beaten with a splash of water
7 – 8 tablespoons
jam or jelly
cinnamon/sugar mix for dusting

1. Preheat your oven to 375 degrees, and line your pan with parchment paper for easy clean up, or lightly grease it so you don't have your pop tarts stuck too bad!  I do recommend the parchment though in case some jam leaks!

2.Put dry ingredients in food processor with dough blade and mix together.

3. Take butter from fridge and cut into 1/2 in chunks.  Add to processor and cut in butter until it has a crumbly texture and butter is mixed throughout. You could use a pastry cutter if you don't have a food processor.

4. Slowly add water until a dough forms this should take about 1/2 cup total, but will vary. 

5. Take dough ball and roll out on lightly floured surface. 

6.  Cut out your pop tart shapes!  You will need to pieces for each poptart.  I just used a circle cutter, you could do whatever you would like though! 

7. Place a small amount of jam in center of one shape.

8. Lay other shape on top and pinch edges together with a fork or with your hand.

9. Poke holes on top layer to for baking.

10. Beat egg with some water and lightly brush egg was on top of pop tarts

11. Sprinkle a smidge of cinnamon sugar mix on top!

12. Bake for 18-25 minutes!  Mine took about 20.

The pop tarts were a HIT with Addy.  We used homemade jam from great grandma!  After they had cooled I put them on a cookie sheet and placed them in the freezer.  Once they had frozen I threw them in a ziplock so they wouldn't get stuck together and now we can just pull them out as we need them!  Yum!  Ps my favorite non-homemade jam is the kirkland organic strawberry if you do not have homemade as an option
