Cilantro-Lime Chicken Strips

Today I cooked a recipe I modified to fit my Lean & Green Standards for my Take Shape For Life program I am currently on!  We all were pleasantly surprised by how it turned out and even Addy gobbled it down! (The labeling behind the ingredients is for TSFL readers.  They know what it means!)

Cilantro-Lime Chicken Strips - 4 servings (be sure to measure to your 6oz cooked though)

4 tsp Olive Oil  - 4 healthy fats
6 tsp Lime Juice - 3 condiments
1 cup fresh cilantro - 1 condiment
1/2 Jalepeno (fresh)
1 Splenda packet - 1 condiment
1 clove garlic (chopped) - 1 condiment
4 chicken breasts

1. Cut each chicken breast into strips or chunks easy for grilling (like chicken strips) and set aside.

2. Combine the 1/2 cup water, the oil, lime juice, cilantro, jalepeno, splenda and garlic in a blender.  Puree until smooth.  Reserve some of the marinade (1/4 cup), transfer the rest to a glass baking dish.  Add chicken to the dish and toss to coat.  Cover and refrigerate at least 2 hours.

3. Preheat the grill.  remove chicken from marinade and toss out marinade.  Grill over direct medium-high heat 3 minutes per side or until cooked through.  Brush chicken with the reserved marinade and serve.


I served the chicken with some fresh steamed zucchini!

1 Lean (be sure to measure)
1 Healthy Fat
1.5 Condiments

We still threw out some of the marinade so the stats may be a smidge off, but it is close!  Oh, I should also add that if you don't like cilantro, you shouldn't make this recipe :)
