Butternut Squash Soup

Last week there was a butternut squash in my bountiful basket and the bountiful basket Facebook page posted a recipe for Butternut Squash Soup.  I decided to give it a shot because I had a wonderful squash soup around Christmas time and I wondered if this would be comparable.  This soup was delicious!  We all loved it.  It tasted sweet and cheesy!  Don't knock it till you've tried it because I am not normally a squash person.

Butternut Squash Soup Recipe

6 TBS chopped onion
4 TBS butter
2 lb butternut squash
3 cups water (you may need to add extra while cooking)
4 chicken bouillon cubes
1/2 tsp. marjoram
1/4 tsp. pepper
8 oz (or less) cream cheese - I used low fat

Saute onion in butter. Add all but cheese and bring to a boil. Cook 20 minutes. Put in blender and puree. Add cream cheese and puree again. Return to the pan to heat through. Do not boil.

Serves 4-6

I precooked the squash in the oven at 350 degrees for about half an hour so it was easy to cut up.
