Baked Zucchini Fries
I made a delicious treat with the zucchini from my bountiful basket last week! I have seen a bunch of recipes on Pinterest, but kinda conjured up my own with what I had in my pantry. They were delicious. We all loved them. Addy and I ate ours plain, Jon dipped his in ranch. I'm thinking some marinara would be good on them too!
Baked Zucchini Fries
-1 cup Panko bread crumbs
-1/4 cup shredded Parmesan cheese (the grated kind in green bottle would work too if you have that on hand)
-1-2 TBL of Pizza seasoning or Italian seasoning
-1-2 shakes of red pepper flakes
-2 eggs beaten
-2-3 Medium Zucchini
-First wash your zucchini and cut them into fry strips. I cut each zucchini in half for length then quartered the halves.
-Let your zucchini fries sit in a colander so the moisture can seep out for about 45 minutes. Then pat them dry.
-Mix all dry ingredients together in a large bowl (crumbs, cheese, seasonings, pepper flakes)
-Roll each zucchini fry into egg wash, then into the crumb mixture and place on a non-stick cookie sheet, or a sprayed pan.
-Bake Fries at 425 degrees for 15 minutes.
-Enjoy!
I am so glad I tried this because each summer we end up with a lot of zucchini from other peoples gardens and I'm always looking for ways to cook it so there is some variety!
