Operation Breakfast!

Day 1 of our breakfast plan has gone fabulous!  The first day is the hardest right?  We had scrambled eggs with applesauce.  Addy loved her eggs (of course).

I also just finished an entire batch of baked oatmeal and blueberry muffins!  That way we can use them this week, and put the leftovers in the freezer for weeks to come.

I am thinking that if I make one or two freezer breakfasts a week then I should be able to keep up with our consumption and always have something in the freezer in case we are on the go and can't do our regularly schedule breakfast.  

The baked oatmeal is a delicious, healthful recipe with a smidgen of sweet.  I'm planning on thinning Addy's out with a bit of milk or yogurt when she eats her portion.   Most of the portions are pretty large so I'm thinking her and I will split one muffin or one oatmeal portion which will stretch the meals further.

The New Best Recipe!  We received this book as a wedding gift and I use it quite frequently.  All the recipes in it were attempted several times until they found the best recipe.  This is my go-to book if I know I want to try something but can't decide which of a million recipes online might be the best.

The muffins are not the most healthy thing I've ever made, but they are SO delicious.  Secret ingredient: sour cream.
