Ham & Sundried Tomato Alfredo

This recipe was originally taken from Taste of Home: Simple & Delicious magazine.  I love it how it originally is, but I was hoping to lighten it up a bit since the recipe calls for an entire cup of cream.  So this post contains my edited version.

This recipe is so easy to make and really has a fancy feel to it!  Jon always tells me it tastes like pizza - I'm not sure if I agree, I do know it tastes wonderful.

Lighter Ham & Sun-dried tomato Alfredo
Original recipe: 14 Weight Watchers Points
New recipe: 11 Weight Watchers Points

8oz uncooked linguine
1/4 cup chopped oil-packed sun dried tomatoes
1/2 cup heavy whipping cream
1/2 cup low fat milk (1%)
1/2 cup grated Parmesan cheese
1 cup cubed fully cooked ham (I freeze ham chunks in 1 cup portions after I make a full ham but you can buy ham chunks or a ham steak)

- Cook Linguine according to package directions

- In a large skillet saute tomatoes for 1 min (the oil in them should be enough that you don't need to coat the pan).  Reduce heat; stir in cream and cheese.  Bring to a gentle boil over medium heat.  Simmer, uncovered, for 5-7 minutes until it thickens. 

-Drain linguine and stir it into the sauce mixture.  Add ham and heat through.
