This is one of our favorite family recipes! It is just scribbled on an index card in my recipe binder, but I'm pretty sure I got it from my friend Heather.
The thing I love about this recipe is that I can use deli Roast Beef (as we rarely buy big roasts), and it still tastes fabulous! I had every intention of taking a photo and forgot until there was only one bite on my husband's sandwich left.
French Dip Roast Beef Sandwiches
Ingredients (for 4 sandwiches)
2 Tbl Butter
Oil
1 Shallot (chopped)
1 1/2 Tbl flour
1 shot dry sherry wine
2 cans beef broth
1 1/2 lbs deli sliced roast beef (I prefer to get this from the deli rather than prepackaged)
Montreal Steak Seasoning
4 Torpedo Sandwich rolls (hoagies)
1 Yellow Onion
4 Slice Provolone Cheese
Warm Oven to 350 degrees
For Caramelized Onions (to top sandwich)
Slice yellow onion and saute in some oil for about 15 minutes (mixing occasionally)
For AuJus Sauce
In a large deep skillet over medium heat melt butter. Saute the shallots in butter for two minute.
Add Flour to butter/shallots and cook for 1 minute.
Whisk in Sherry and cook liquid out.
Whisk in broth in slow stream.
Bring Sauce to boil and let simmer till ready to serve.
For Meat
Place roast beef slices over large work surface and season with grill seasoning (or salt & pepper if you don't normally have the seasoning).
Add meat to your finished AuJus to warm it.
Putting it all together
Pull Meat out of AuJus with tongs and place on bottom half of hoagies.
Put caramelized onions on top of the beef.
Place slice of provolone cheese on top of the onions (it holds it all together so you don't lose your onions!)
Put in oven until cheese it melted.
I like to serve this with Oven Fries and Salad. We don't eat fries often, but it just seems to "fit" with this one!
