I am very thankful to be cooking for three (for the most part) this week, after cooking for 32 the past weekend! It was a blast and all meals turned out well. It is very tricky cooking with only a mini fridge, a roaster and electric griddle!
Here is this weeks menu.
Thursday: Sourdough Waffles, Sausage, Fruit Salad & Cake Batter Bars - we are having company
Friday: Dinner at a friends - we are bringing Bakes Smores for dessert
Saturday: Baked Penne with Chicken and Sun dried Tomatoes, salad - this looks really BAD for us so I'm gonna do some substitutions on this new recipe.
Sunday: Dinner at a friends - we are bringing DIY Peanut Butter Eggs for dessert
Monday: Tacos, Salad
Tuesday: Buffalo Chicken Pizza, Salad
Wednesday: Enchilada Casserole, Salad, Chips/Salsa (we moved this from last week since we did something different)
I'm impressed with our social calendar this week!!
