Chocolate Peanut Butter Sandwich Cookies



I made these tasty little treats the other day for a women's event at our church, and for a family who had just had a baby.  They were super Yummy if you are a fan of the notorious peanut butter/chocolate combination!  They also were not enormous which was nice because I didn't feel SO bad eating one... or two... maybe.

The recipe is from January's Taste of Home Magazine but I made the adaptation of making only 1/2 the amount of filling.  I had to do that change because I realized I didn't have enough Peanut Butter, but am so glad I did because I cannot imagine having used twice the amount of frosting on such a sweet treat!

Here's the recipe w/my Adaptations:

For the cookies:
1/2 cup butter, softenened
40z Cream Cheese, softenened
2 eggs
1 tsp vanilla extract
1 pkg. chocolate cake mix
1/4 cup all-purpose flour
For the filling:
3/8 cup creamy peanut butter
2 oz cream cheese softenened
1 1/4 cups powdered sugar
1 1/2 Tbls milk
12 miniature peanut butter cups, chopped

1. In a large bowl cream together the butter and cream cheese until light and fluffy.  Then beat in the eggs and vanilla.  Gradually add cake mix and flour to creamed mixture and mix well.

2. Shape dough into 1 inch balls.  Place 2 in apart on ungreased baking sheets and slightly flatten.  bake at 375 degress for 6-8 minutes or until set. Put on cookie rack to cool completely

3. For filling: beat together peanut butter in cream cheese until fluffy.  Add the powdered sugar, milk and vanilla; beat until smooth.  Spread the bottoms of half the cookies; sprinkle with chopped peanut butter cups.  Top with remaining cookies.  Store in an airtight container in the fridge.

If you want extra sweet go ahead and double my version of the filling.... I dare you!
