4 cups of oats
2 tsp vanilla extract
6 Tbl of Raw sugar (you can use any sweetner, and adjust quantities as you prefer. This was just sweet enought)
2 cups of unsweetened applesauce
2 cups of non-fat milk (you can use any liquid really, water, heavier milk, creamer, juice)
1 tsp salt
1/2 cup chocoalte chips
1 Tbls melted butter
2 tsp cinnamon (if you like it in your cookies - which I do!)
The modifications I made were to the amount of chocolate chips (I put less) sweetner (I put less than the recommended), and butter (I put less, but you could omit it completely). I used the applesauce and the non-fat milk to make it a bit more healthy.
1. Mix all the dry ingredients together in a large bowl first (excluding the chocolate chips).
2. Add wet ingredients, and mix until all is incorporated.
3. Mix in chocolate chips.
4. Seperate into 12 oversized muffin tins. Make sure to spray them so it doesn't stick, I have one of those non-stick silpat-y muffin "tins" than nothing sticks to so I didn't need to do this.
5. Bake at 380 degrees for 20 minutes. You can also broil for a short time at the end of cook time for a crispier top.
You may be saying well 12 servings of oatmeal is a bit much don't you think... well I let them cool completely and then put them in a large freezer bag and froze them. To reheat you just pop a frozen one in the microwave for 1.5-2 minutes and they are great! Because of the moisture content they did have a bit of "ice" on them when I took them out of the freezer, but it just reabsorbed and tasted awesome.
For a sweet treat you can add 1-2TBLS of low fat cool whip on top for an additional 20 calories.
One serving with my modifications, is 5 Weight Watchers points. And if you use the low fat cool whip 1-2Tbls are point free.
