Well our annual trip to the pumpkin patch was a raging success! Addy cooperated the entire day as we carted her to the pumpkin patch, Palucci's, and for a stroll in downtown Lewiston. We even succeeded at getting a great family photo.
The chili tasted as amazing as I remembered it! We have been making this White Chicken Chili since we first were married (6.5 years ago) after a friend made it for us at her house! Here is the recipe as promised:
Ingredients:
Vegetable Oil
1 medium onion, chopped
2 cloves garlic minced
3 cups chicken broth
1/2 tsp ground corriander
8oz can chopped green chilis (I usually have to buy 2-4oz cans)
2 Tbls lime juice
2 tsp ground cumin
1.5 tsp dried oregano
1/4 tsp cayenne pepper
3 cans white beans drained
3 boneless skinless chicken breasts cubed.
For Toppings:
Grated Cheese
Tortilla chips
Sour Cream
Diced Tomatoes
Sliced Avocado
Anything else your heart desires
In a large pot put oil, onions, garlic and chicken. Saute until the chicken is cooked most of the way through. Add broth and all other ingredients. Bring to boil then reduce heat. Simmer for 20-25 minutes.
Easy Peasy. The recipe serves 6 people generous portions.
We all had our own special way of designing our chili. My husband prefers his chips broken on the bottom of the bowl. I put all of the toppings listed above on mine. The topping pretty much make the chili in my opinion!
