This Week's Menu

First I want to start off by reviewing last weeks new recipes!

Buffalo Chicken Tacos  These were outstanding!! We just switched out the ranch dressing for some blue cheese dressing to suit our taste! 

Slow Cooker Beef Stroganoff - I must start by saying that I did NOT read the reviews of the recipe before I decided to cook it, so you can imagine that when the morning came and I looked closer I realized that people did not like the recipe as it was written, that I had to make some modifications.  There were many suggestions on what modifications to make and I had to make do with what I already had on hand since I didn't have time to run to the grocery store.  I added beef broth, 1/2 packet of onion soup mix, garlic, salt and pepper, and a dollop of sour cream at the end.  It was actually VERY good.  it was a bit to salty so I would probably not add salt next time since the soup packet had plenty. My husband loved it so it will most definately appear regularly on our menu since it was a crockpot recipe that we actually enjoyed! (I tend to have a hard time coming up with good crock pot finds)

Okay so now onto this week:

Thursday: Tacos
Friday: Chicken Cordon Bleu (from the freezer) and salad
Saturday: Honey Dijon Chicken Breasts and salad
Sunday: Something quick from the pantry - maybe tuna noodle casserole
Monday: New recipe - BLT Sandwich Salad
Tuesday: New recipe - Buffalo Chicken Panini's (yes we LOVE buffalo everything)
Wednesday: New recipe - Kung Pao chicken

I did a lot of freezer searching for this week to go easy on the budget since we just bought 40lbs of chicken breasts from Zaycon Meats this week!  It will make things tight this month but that meat will go a long way and was only $1.49lb!!  Speaking of Zaycon Foods I definately recommend that you register for their site now so you recieve their updated emails!  This 40lbs of chicken is a regular sale that they do and it is definately worth it.  The chicken is hormone free and natural.  You do have to do a little trimming and prep work to get the chicken freezer ready but it is way worth it and super yummy!
